I've been an anime fan for 20 years, and there are loads of top quality animation styles and stories out there - some are ridiculously long and epic, such as One Piece, that you would spend the rest of your career reacting to if you did one episode a week; others are short(er) and sweet, like SpyxFamily. You've seen how gritty they can get in AoT but you can literally pick what to watch based on your current mood, which is the great thing about anime - there are so many genres. Whatever reaction you may choose, it's worth considering watching the subtitled versions with the original Japanese voice actors. Only in rare instances have the English dubs been better, in my opinion.
