I'm not a big anime fan but recently I've watched Vinland Saga and it blew my mind I think you guys would enjoy it.

The Last of Us is fantastic, but it doesn't have the plotting and maneuvering type narrative that you guys seemed to enjoy so much with GOT and HoTD. I'm sure you'd find it visually stunning and engaging though, and I'd support whatever you decide to do next. My vote would be for something like Severance though because the audience is constantly made to ask questions.

You could do parallel viewings? Watch a few episodes and then a movie and so on. Keeps it fresh and surprising.
