The mirror world doesn't show a person's "other side", that was only Araragi's wrong assumption before the conclusion of the arc revealed that it was actually their left behind and forgotten regrets. This version of Shinobu is a regret she has left behind. Also the "life she saved" as mentioned at the end is referring to Araragi in Kizu, not some future event we haven't seen yet.
