Wow! That’s insanity! I’ve never worked in a place that didn’t have a kitchen close time or a call for last drinks. You might still end up staying later if customers left at close or were still eating by close but you wouldn’t be taking an order 5 before closing. I feel that’s pretty standard across Australia though.

Ahhhh…the dreaded ‘LastHoles’…the bane of every restaurant kitchen. My solution is that ALL music streaming services should offer a ‘vacuum channel’. All vacuum cleaner all the time! But until that happens our solution was to shout from the upstairs office down to the server in the dining room ‘Hey! Want me to bring the vacuum down?’

In all the places I worked, we just had a closing time. And it was a total luck of the draw when you’d be able to leave. They would allow ppl to sit and order up til the late minute.

While I am all about sign changing, more often then not the customers don't even read them anyway. Three different jobs I had I experimented on sign location on walls and doors and 98% of the time no one read them, even if they had hours printed on them. So with my current server job, we all just tell the customers they can't eat at our restaurant when the last seating time comes, cause we don't want our BoH recleaning any of their stuff, and none of us servers wanna be there two hours more then we need to for campers.

Omg 🤣 I had a manager who would get so mad at those people! She would go around and turn all the TVs off, turn off the music, turn the lights all the way up, and make it as awkward as possible while they sat there. She’d stand against the wall and stare at them. So awkward

F that. Go Ruby! But also .. Isn’t that just standard? Most places close the kitchen by 8.30 some 9 even if they close at 10 or 11 unless they are late nighters. There’s a special kind of hell for people who come in right before close, especially those expecting food service.

Change the sign Terry. I used to work at a diner, yes, a lowly diner where they shut down at 3. The last server, VERY often me had to make sure all closing steps were done. Alone. If somebody stumbled in and wanted something cooked..like burger and fries, at 2:50..I was stuck with that and the complete re-set. He tried to hire me full time, as I recall. Yeah, that went well.....for him..

Ruby's going to end up like two or three restaurateurs that I know in Dallas; making 5-star meals with a great clientele 'on the days she's there', and then taking increasingly long breaks as she 'scours the planet' for new dishes and presentations. She'll cash out after 5-7, write a book about the pitfalls of the food biz, then end up running a hot hut outside of Arco, ID, in the Lost River Valley, making MORE money selling high end veggies and free-range poultry and lamb from the cloth quanset hut. She'll have crystals hanging from the kitchen window. And a corral.

RUBY FOR THE WIN! BOO TERRY. Most managers I've dealt with for the past 13 years are like this as well as no backbone and no integrity. A few good mgrs here and there but they end up leaving. Love this! Very relevant!
