Not sure about them being super sneaky, but many sharks that attack people ABSOLUTELY will just go for a limb and back off because they don't actually like eating people because we have way more bone mass than what they typically go for like fish or seals. They just... don't have anything but a mouth full of pointy teeth to test what they might be preying upon is.
